Organic extra virgin olive oil
1 red onion diced
2 cloves garlic
1/2 cup olives
1/2 bunch of fresh basil torn
1/2 cup semi-sundried tomatoes,
2 large marinated artichokes, sliced
1 cup tomatoes paste
Salt to taste
1/2 cup cooked quinoa
1/2 cup humus to serve
In a medium saucepan over a high heat place oil, then onions and garlic, sauté until transparent.
Add sauce and all remaining ingredients, but not the quinoa.
Put lid on, bring to boil, and then simmer for 10 minutes.
Serve on a bed of cooked quinoa, with a dollop of humus on top.
Enjoy!
