1 cup of warm, cooked chicken.
2 cups of baby spinach
2 cups rocket
1 Lebanese cucumber cut in inch long slices
1/4 Jap pumpkin cubed in small pieces and roasted
1 small- medium beetroot grated
1/4 cup lightly roasted pine nuts
1/3 cup walnuts halved
1/2 cup fresh pomegranate seeds
1/2 cup cubed cows milk feta cheese
1 ripe avocado cubed
Dressing:
2 tbs. heaped mayonnaise (I use Whole egg organic real mayonnaise for it’s mild, rich flavor)
2-3 tbs. apple cider vinegar
1 tbs. olive oil
Salt for taste.
Serves 4.
